It's a citrus fruit like perhaps no other. Known to most only by name, bergamot and its aroma have enjoyed a global success story for centuries, as both Earl Grey tea and Eau de Cologne are unthinkable without it. In Calabria, home to 90 percent of the world's harvest, fruit grower Giuseppe cultivates his grandfather's bergamot orchard. He often uses the fruit himself to enhance dishes. But bergamot is also attributed with remarkable properties in medicine, due in part to its acidity. For those who would like to try something with this citrus fruit at home, Lucie has two tips: cookies with bergamot candies and candying citrus peels.
